Australian-American female powerhouse Jess Pryles is a cook, author, TV host and a professional Hardcore Carnivore. Her expertise lies in all things red meat, creating dynamic original recipes with a Southern and Tex-Mex twist. She is a respected authority on low’n’slow smoked meats— particularly Texas style barbecue. Additionally, Jess is the creator of the internationally-acclaimed line of meat & steak seasoning rub, Hardcore Carnivore®, has authored a cookbook of the same name. is the cofounder of the Australasian Barbecue Alliance and the designer of an eponymous model of the Pitts & Spitts smoker. Over the years, Jess has gained experience by visiting ranches, slaughterhouses & butcher shops, has hunted as part of the rite of a responsible meat eater, completed courses at Texas A&M University's Meat Science department, and taught her own classes in the US, Australia, Sweden & Brazil. She's a regular on the Food Network and has grilled live on the Today Show in addition to being a judge for many prestigious BBQ competitions worldwide.
